About this Research Topic
This congress serves as a forum for the exchange of ideas, research findings, and best practices to drive the agrifood industry towards a more resilient and environmentally responsible future, committed to the “One Health” concept.
This Research Topic aims to collect selected research contributions to the Congress, specifically those discussed during Day 3 of the event, which is dedicated to nutrition, diet, and health. However, it must be highlighted that presenting at this Congress is not required for submission.
Our goal is to contribute to a comprehensive understanding of food attributes like nutrients, bioactive compounds, and food microbiota. Furthermore, investigating how food matrices influence the absorption of food components and their impact on human health holds significant importance for the food industry and health services.
Finally, we want to explore how the knowledge about nutrients, bioactive compounds, food matrices, microbiota, and human health could contribute to achieving healthier, more sustainable, and innovative food systems, aligned with the “One Health” concept.
We welcome Original Research, Methods, Opinions and Review articles from both the presenters and outside researchers to address the following research questions:
• In what ways do food microbiota contribute to the presence of nutrients and bioactive compounds in food?
• How does the gut microbiota mediate the health impact of bioactive compounds derived from the diet?
• What are the mechanisms through which diet shapes the gut microbiota, and what are the implications for human health and well-being?
• In what ways do food microbiota influence the triad: food - gut microbiota - health outcomes?
• How can the nutritional value of local and sustainable foods be optimized through the exploration of specific nutrients and bioactive components?
• What are the precise effects of different food matrices on the bioavailability and bioactivity of essential nutritional compounds?
Additional research questions may be explored if they are in line with the scope of the Research Topic.
