About this Research Topic
Microbiota modulation by proteins and food additives is of interest in particular in the context of precision nutrition, and custom-tailored production of food products/nutritional supplements. In this research topic, we welcome the contributions of original research articles and reviews dealing with:
1. Effects and structure-function relationship of proteins and food additives on the compositions and functions of gut microbiota.
2. Difference and synergy effect of proteins and food additives on gut microbiota and subsequently on the host health, especially intestinal function.
3. Metabolic mechanism of proteins and food additives by gut microbiota, especially through the specific enzymes.
