Lipids are the essential macronutrients and are a major energy source for human metabolism. Lipids (including fatty acyls, sphingolipids, glycerolipids, glycerophospholipids, prenols, sterols, saccharolipids, and polyketides) are bioactive metabolites involves in various metabolic pathway. While bioactive metabolites including polyphenols and flavonoids in food are widely investigated, analysis of novel lipid nutrient composition in foods and their biochemical implication studies is very limited in the literature. Despite there is great progress in food metabolome analysis, the data on the food lipidome is sparse.
This research topic will focus on functional and structural studies of lipid as an essential nutrient. The topic aims to address the knowledge gap about lipid nutrients in food by presenting current and novel methodologies to understand their concentration and biochemical roles. We welcome research focusing on the analysis, characterization, and functional studies of food lipidome, in particular, the discovery of novel functional lipids, such as fatty acyls in food and their characterization by the aid of mass spectrometry. Further detection and characterization of n-3/n-6 fatty acids, nutritional significance, and their abundance in complex lipids are also welcomed for submission.
We welcome original research and comprehensive review articles on any proposed topics. We welcome submissions from experts on the potential topics including, but not limited to, the following:
● Advanced analysis of lipid metabolites using different approaches: liquid and gas chromatography, spectrometry, NMR, voltammetry, etc.
● In-vitro and In-vivo studies on lipid nutrition and mechanistic insights
● Functional Food Lipids in health and disease management: both clinical and animal studies
● Food technologies applied to lipid nutrition
● Analytical strategies for exploring food lipids and their role in food safety
