About this Research Topic
All Rising Star researchers were individually nominated by the Frontiers in Food Science and Technology editors in recognition of their potential to influence future directions in their respective fields. The work presented here highlights the diversity of research performed across the entire breadth of food biotechnology with the ultimate aim to highlight effective and efficient ways of improving the processing of raw materials into desirable food products. We particularly encourage submissions covering the following topics:
• Microbial communities and ecology of industrial fermentations.
• Detection methods of microorganisms associated with the food production chain.
• Metagenomic approach applied to fermented foods.
• New materials to prevent food contamination during food production chain.
• Formulation of novel functional aliments.
• Sensory analyses and selection criteria of novel functional foods.
• Bioactive compounds for biotechnological use.
New articles will be added to this collection as they are published. Early career researchers are defined as within 10 years after completing their Ph.D., M.D., or other equivalent terminal degrees. The Topic Editors suggest the submission of original article types.
