Beer is the alcoholic beverage most consumed worldwide in terms of volume. Furthermore, there is a trend of consumers requiring healthier and higher-quality beer products, which has led researchers to transform and integrate traditional brewing methods. From novel digital technologies such as computer vision, machine learning, sensors, to robotics, and artificial intelligence, offering high-quality beer products that can be tailored to consumer demands. These technologies offer great advantages, such as reduced time and costs in the beer production chain from field to glass.
The aim of this research topic is to expand the knowledge and research regarding beer’s role in human health, along with the most recent advances in traditional brewing methods and the development of novel applications using new and emerging technologies, such as artificial intelligence (AI).
The submission of original research papers, review articles, and short communications are highly encouraged. Economic analyses based on simple surveys will not be considered within this Research Topic. Any paper submission that incorporates complex surveys or sensory analysis should have a previously reviewed and approved human ethics made by an independent and recognized body, such as Universities or Government Ethics Committee. An approved ethics committee letter signed and ethics ID should be included in the submission, and reference to these documents should be mentioned in Materials and Methods.
