Cold stress is a global common problem that significantly limits crop development and yields. The growth rate of horticultural products has increased considerably in recent years. However, they are susceptible to low temperature stress, resulting in quality deterioration and even decay, which led to great losses of horticultural products worldwide. Scientists have done a lot of work on crop responses to low temperature stress and have made positive progress in terms of cold signaling perception and transduction, interactions between different plant hormones, transcription and metabolic regulation. Horticultural products had been paid less attention relative to traditional crops due to their economic importance, diversity, and complexity. However, in recent years, with the sequencing of a large number of horticultural crop genomes and the development of high-throughput detection technologies, the study of low temperature stress of horticultural products has entered the era of functional genomes and big data. At the same time, more low temperature stress control technologies for horticultural products are constantly being developed.
Although there are many research directions on low temperature stress in horticultural products, regulatory substances such as plant hormones which may play a hub role need more attention. Therefore, it is necessary to carry out systematic research from physiological, molecular, genetic, multi-omics, and other perspectives to explore the common cold response mechanism mediated by phytohormones in horticultural products.
