Sustainable utilization of agro-food wastes to generate alternative sources of bioactive compounds with added value for food industrial applications provides an opportunity for earning additional income for the provider in the industrial sector. Furthermore, the increased awareness of consumers regarding the products they purchase and consume has led to an increased demand for new products containing biologically active compounds from natural origin obtained in a sustainable way. Although synthetic bioactive compounds are approved in many countries for food applications, they are sometimes controversial. Therefore, there has been an increasing interest in the use of natural bioactive compounds that can be used as food additives and
supplements to maintain the food quality, safety, wholesome, appeal, and correct nutritional deficiencies, while maintaining a suitable intake of nutrients, or to support physiological functions, respectively. Therefore, finding new or non-conventional sources has become a priority for the food industry.
This Research Topic is looking for original research articles and reviews that focus on but are not limited to the following sub-topics:
-Use of polyphenols, vitamins or pigments extracted from a plant-based source as natural antioxidants, colorants, preservatives or with a health benefit
