Food industry has played a crucial role in the pandemic and post pandemic era, by the enhanced supporting of foodstuffs and food chains world-wide. Food research areas are attracting more attention in the field of microbiology. However, many fundamental, innovative studies and outcomes in the field of microbial technologies for food production and processing should be focused and addressed. For the future and sustainable food industry, this Research Topic focuses on the innovative microbial technologies in food industry, microbial bioengineering for sustainable food system, and innovative data-driven microbial technologies in food science.
Especially welcome are the manuscript contributions focusing on, but not limited to:
• Innovative microbial technologies in food industry, including innovative microbial biotechnologies in development of future foods and sustainable food production, new microbial technologies for food safety assay, detection and control.
• Microbial bioengineering for sustainable food systems. This includes novel microbial technologies for global traditional food processing and brewing, food-wastes biodegradation, oil-producing microorganisms and probiotic related functional food microorganisms and applications.
• Innovative data-driven microbial technologies in food science, including mathematical modeling of microbial growth, constraint-based metabolic modeling, application of multi-omics or intensive data analysis driven food health and risk assessment.
Both original research articles and reviews are welcome. Those only include data-analysis results, policy prediction and macroscopic analysis without detailed wet and/or describable experimental results are not in the scope of this Research Topic.
