Global societies are intensively working to achieve the Sustainable Development Goals (SDGs); among them, Goal 2 focused on "Zero Hunger" requires efficient and sustainable food production systems able to meet the four dimensions of food security: (1) food availability; (2) food access; (3) food utilization;
and (4) stability over time. Moreover, Goal 12 "Sustainable consumption and production" attempts to increase resources efficiency and economic growth without compromising the environment while promoting sustainable lifestyles. Although these goals are far from being achieved for most countries, Latin America is facing even more important challenges in terms of food safety and nutrition.
This Research Topic is focused on the new developments that are currently being done by the Latin American community in the area of Food Science and Technology that can help address some of the mentioned challenges. This Research Topic will contain both research and review papers by recognized experts in the field working in Latin America concerning various aspects related to Food Science and Technology (e.g., food safety, food bioactivity, nutrition, food quality, food engineering, food traceability, food analysis, food technology, green chemistry, food processing, food by-products, valorization, functional foods, nutraceuticals, etc.).
The goal of this Research Topic is bidirectional. On one side, it will be a good opportunity for Latin American researchers to show to the scientific community around the world the main topics in which they are involved in Food Science and Technology that can also help address some important issues related to the achievement of SDGs. On the other side, it will be a great opportunity for Frontiers in Nutrition to become one of the reference journals in Food Science and Nutrition in Latin America.
We would like to invite you to participate in this Research Topic by presenting your current original results as a research article.
